Perfect Smoked Beef Ribs

Choose a 3-4 marbled set of Beef short ribs. If you want remove the membrane from the rib side of the beef rib or put multiple holes between the rib bones through the membrane, this will assist to let marinades and rubs to penetrate. Rub salt, pepper and onion powder onto the ribs. Place the ribs into your smoker or oven at 107 - 110 degrees for three hours.

Baste the ribs with your favourite basting recipe every hour.

After 3 hours wrap the ribs in foil or BBQ paper and return them to the smoker for another hour.

Remove the ribs from the wrap and place back in the cooker for approximately 1 hr or until the ribs internal temperature reaches 95 - 96 Celsius.

Take them out let them rest and serve.
